Mandarin Chicken

| Ingredients: |
| 4 4-oz. boneless, skinless chicken breasts |
2 T. orange marmalade |
1 11-oz. can mandarin oranges, juice drained and reserved |
1 t. crushed red pepper |
| 1 T. corn starch |
| 12 oz. pineapple juice |
˝ salt |
| ˝ t. black pepper |
˝ t. ground ginger |
| 2 T. orange juice concentrate |
1 T. sesame oil |
Combine drained juice, 6 oz. of the pineapple juice, and pepper. Pour over chicken, cover, and refrigerate 1 to 2 hours. Remove chicken; discard marinade. Heat oil in a skillet, add chicken, and cook over medium heat until done, about 15 minutes. Stir remaining ingredients in a pan over high heat until thickened. Spoon sauce over chicken.
