Fiesta Rice-n-Beans

| Ingredients: |
4 C cooked rice
(cook in chicken broth)
2 cans kidney beans (15 oz.)
1 medium onion (chopped)
3 garlic cloves (crushed) |
1 tsp coriander
1 C tomato juice
1 tsp cumin
1 T chili powder
½ C water |
| Salsa: |
1 large tomato
1 small white onion
¼ C lime juice
¼ C cilantro (chopped) |
| Cook rice in chicken broth. Combine next 8 ingredients and cook over moderate heat until onions appear translucent and you can hardly wait to pop it into your mouth. Pile a mound of rice and top with salsa. Scrumptioso! |
