Cool Dill Potatoes
Serves 4. Nutrition per serving: Calories - 84, Protein - 2g, Carbohydrates - 15g, Fat - 2g, Cholesterol - 3mg
| Ingredients: |
1½ lbs red and white potatoes
(small, diced)
1 tsp white wine vinegar
¼ C plain yogurt (non-fat)
2 T mayonnaise (reduced fat)
1 T Dijon mustard |
1/8 C dill pickle juice
1 tsp salt
1/3 C celery (minced)
¼ C white onion (minced)
1 tsp parsley (minced)
coarse black pepper |
| Dice potatoes into 1" pieces. Cover with cold water in pan and bring to boil. Cook 7 minutes or until tender. Drain and set aside to cool. Combine next 6 ingredients. Add to potatoes. Fold in remainng ingredients. Pepper to taste. |
