| Ingredients: |
| Marinade: |
½ C lemon juice (fresh)
½ olive oil
2 tsp salt |
1 tsp pepper
2 T lemon thyme (chopped)
1½ chicken breasts (boneless, skinless) |
| Salad: |
1 red bell pepper
1 cucumber (sliced) |
1 small red onion (sliced)
mixed greens (14 oz.) |
| Dressing: |
1/3 C mayonnaise (light)
1/3 C buttermilk
1 clove garlic (minced) |
¼ C cilantro (chopped)
3 T onion (minced)
dash hot sauce |
| Marinate chicken 1 hour. Discard marinade and grill chicken over hot coals 6 minutes each side. Slice diagonally. Toss salad and to with chicken. Mix dressing adding salt and pepper to taste. Drizzle over salad and serve. |
