| Crust |
1¼ C flour
½ tsp salt
½ tsp sugar |
½ C butter (cubed/chilled)
1/8 C ice water |
| Filling |
1 T butter
3 green onions (chopped)
1 C spinach (frozen)
1/3 C half & half
1 C ricotta cheese (part skim) |
3 eggs (lightly beaten)
½ tsp salt
1/8 tsp nutmeg
1/8 tsp pepper
½ C Swiss cheese (grated) |
For crust, blend flour, salt and sugar in a food processor. Add butter and process for 10 seconds. Add water and process 10 seconds. Form dough in a disc, wrap in cellophane and chill 30 minutes. Preheat oven to 425°. Roll out dough and press in a quiche plate. Bake 15 minutes with pie weights. Remove from oven and reduce heat to 375°. For filling, thaw spinach, press out water and chop finely. Sauté onions in butter. Add spinach, cooking 2 minutes. In a bowl, combine spinach with remaining ingredients except Swiss cheese. Pour into pastry shell. Top with Swiss cheese and bake 40 minutes. |
